For most of its life, Copperas Cove had a brewery-shaped hole in it. If you wanted beer brewed where you were drinking it, you drove to Killeen, Lampasas or Waco. That changed on a Friday evening in February 2025, when Nelson Brew Works opened on South Main Street — the first brewery the town has ever had.
A Family Business, in One of the Oldest Buildings in Town
Nelson Brew Works is family-operated, and it shows in the way the place is run. It sits at 209 South Main Street in downtown Copperas Cove, inside one of the oldest buildings in the city — a space that waited a long time for the right tenant. Before opening, it was stripped back and rebuilt as a micro-brewery: a conversion finished in January 2025, with a twelve-tap system behind the bar and an open kitchen running along one side, so you can watch the food side of the operation as easily as the beer side.
Beer and Pizza, Both Made In-House
The beer is brewed on site, and the taps rotate as batches come and go, which is exactly how a brewery this size should feel — always something you have not tried yet, never a list that has been the same since last summer. The kitchen is not an afterthought either. Pizza is the specialty: made to order, built to sit next to whatever is pouring. It is a simple combination done properly, and it is the reason people come back on a quiet weeknight rather than saving the trip for an occasion.
The Room Copperas Cove Was Missing
From the beginning the plan was a family-friendly venue — somewhere you could bring people, not just somewhere to drink. That has landed the way it should in a town built around families and Fort Cavazos. There is a room that is steady on a Thursday, full on a Friday, and busy on a Sunday afternoon, because it has already become a weekly habit around here. Ours included: Sunday after church is a standing date.
What a Brewery Does for a Downtown
A brewery sounds like a small thing to call a milestone until you notice what it does to the block around it. People who come for a pint stay for the evening. They park once and walk Main Street instead of driving past it. Copperas Cove has been working on its downtown for years, and Nelson Brew Works is the kind of business that makes the rest of the street more worth visiting — for a town this size, that is worth more than the beer alone.

Nelson Brew Works is at 209 South Main Street in downtown Copperas Cove. It is closed Monday through Wednesday, and open Thursday 12–8, Friday 12–9, Saturday 11–9 and Sunday 12–7. They do not take orders over the phone, so on a busy night the plan is simple: come early, take your time, and let the pizza do its work.
